Suckling pig marinated for 24 hours in orange juice, achiote (subtropical berry), and aromatic herbs, wrapped in banana leaves and enclosed in a closed baking dish and cooked at a temperature of 150 degrees for 4/5 hours then filleted and served with Mexican rice, sweet and sour onions with habanero.

Meats of: beef, pork, chicken, peppers, and red onion, cooked in strips and served with rice, beans, and milk cream and four corn tortillas per serving.
Beef Alambre - € 15,00
Dish with peppers in strips, sweet red onions, and marinated beef, all cooked on the grill covered with melted lean cheese, served with 4 corn tortillas per serving.

"Tinga" is finely shredded meat, so that it can be easily used to fill the tortillas to form "Tacos". Shredded pork stewed with potatoes, chorizo tomato, chipotle (dried and smoked chili pepper), various spices, served covered with milk cream and lean cheese and four corn tortillas per serving.
